Green Olive Sauce

Great for meat or fish fresh off the grill

  • 1 cup green olives (no stones)
  • 2 medium tomatoes, sliced
  • 1 medium onion, sliced
  • 1 teaspoon crushed garlic
  • ½ cup white wine
  • ¼ cup lemon juice
  • 4 tablespoons extra virgin olive oil
  • ¾ cup water

Puree olives, tomatoes, onion, garlic, wine and lemon juice in a blender. With the blender on low, gradually add the olive oil. Put into a sauce pan, add water, and simmer for fifteen minutes.

Refrigerate before serving.
